Eel

Our eels are 100% domestically produced. We purchase carefully selected live eels from Miyazaki and Kagoshima prefectures.

Sauce

The rich flavor of the secret sauce has been added every day since the establishment. We have been carefully protecting the taste of this luxury sauce that was handed down to us by our predecessors.

Rice

We seek to select the best tasting variety of rice to go well with our eel, and offer rice from Okukuma, grown in clear stream in Kuma River. We also use locally grown organic rice, vegetables, and seasonings as much as possible.

Water

In Kumamoto prefecture, 80% of the water source is covered by groundwater. Kuma River, one of the three major mountain streams in Japan, is located at the uppermost reaches. Well water is used to bleach eels, cook rice, and make sauce. We are blessed with the source of the most important ingredients.
